We have been craving a creamy pasta however that is so tough to attain if you’re off dairy. So we determined to make use of our leftover hummus & harissa (from our falafel platter) to make a creamy gluten-free, vegan pasta and OMG the consequence was delish with an ideal mixture of creamy, saucy and spicy!

INGREDIENTS
70 gms edamame & mung bean fettuccine explorecuisine
1 cup hummus
half of cup pasta water
2 tbsp harissa paste (regulate in accordance with how spicy you want)
1 tbsp lemon
1 pack cherry tomatoes
2 cloves garlic
Wilted spinach
Black olives
Chilli flakes
Oregano

1. Firstly cook dinner the the pasta al dente and maintain apart. And avoid wasting pasta water for later.

2. Blanch the spinach

3. In a pan, add hummus, harissa, cherry tomatoes, garlic, chilli flakes, oregano, salt and pasta water. Cowl and cook dinner for 8-10 minutes.

4. Now combine within the pasta, blanched spinach and olives. Prepare dinner for a few minutes.

5. Drizzle some lime juice and serve heat.

Notice: You can even drizzle some olive oil and add some sundried tomato and basil
