We fell in love at first chew with this conventional Turkish egg scramble (Menemen) throughout our vacation in Istanbul and have been craving it ever since. It is a easy mixture of tomato, egg, inexperienced peppers and numerous spices however there are various variations of Menemen – some with cheese, Sucuk(sausages), Spinach or veggies which makes it so versatile & simple to customise the best way you want.

We made it with tomato, pepper, eggs, feta, spicy chorizo and served with a crusty bread, which is supposed to be dipped proper into that sizzling & bubbly menemen and oh my god, it was love at first chew yet again.

INGREDIENTS
5 grated tomatoes
Three eggs
1 small onion
1 spicy inexperienced pepper
1 tbsp olive oil
1 tbsp Aleppo-Pepper (substitute – chilli flakes/cayenne)
1 tsp Black pepper
1 tsp butter
1 tsp sugar
Sausages (non-compulsory)
Feta cheese dairycraft
Salt

RECIPE
1. In a pan, warmth olive oil and saute onion & inexperienced pepper till softened. Add the sausages and prepare dinner for a minute.

2. Now add the tomato, butter, Aleppo-Pepper, black pepper, salt and sugar. Prepare dinner for 5-10 minutes

3. Whisk the eggs and stir into the tomato combination good and slowly, giving it a swirly texture. Prime with feta and prepare dinner for 4-5 minutes.

4. Serve sizzling with toasted bread and scoop up the deliciousness.
