Want a comfortable meal for a chilly day?? That is my very favorite fall soup (and one other method to make use of up some apples!)

It’s tremendous easy to make, and is a little bit of a twist on a typical butternut squash soup and is the proper combine on all my favorite fall flavours!

You’ll need to SAVE this one

APPLE & SQUASH SOUP 🍎
2 tablespoons extra-virgin olive oil
1 small onion, finely chopped
1 apple, cored, peeled and finely chopped
1 cup unsweetened apple cider
1 teaspoon floor ginger
1 teaspoon floor cinnamon
Three 1/2 cups natural low-sodium vegetable broth
Salt and pepper to style
3 12-ounce packages frozen squash purée.

1. In a big pot, warmth the oil and cook dinner the onion till delicate and flippantly browned.
2. Add the apples and cider and cook dinner till the apples soften.
3.Add the ginger, cinnamon and vegetable inventory and convey to a boil.
4.Stir within the squash purée and cook dinner till heated by about eight to 10 minutes. 5. Cut back warmth and simmer till thickened. 5. Use a hand blender to purée the combination. (Or pour it in a blender like I did 😋)
5. Season with salt and pepper.
***** if I’m consuming this in its personal for a meal I really like including both 1/Four cup of cottage cheese or 2 tbs Greek yogurt for slightly bit of additional protein… it mixes proper in and makes the soup further creamy ✨
