Lemon cake
2 cups plain flour
1.5 tsp baking powder
Pinch of salt
1 cup sugar
1/Four cup desiccated coconut
3/Four cup coconut milk
1/2 cup dairy free yoghurt
1/Three cup lemon juice
1/Three cup oil
2 tbsp lemon zest

1/2 cup vegan butter
2 cups icing sugar, sifted
1 tsp vanilla
1 tbsp lemon zest
2 tbsp lemon juice
Preheat oven to 180ºc and grease a loaf pan. Add flour, baking powder, salt, sugar and coconut to a mixing bowl and stir properly to mix. In a jug combine coconut milk, yoghurt and lemon juice. Let stand for a couple of minutes to thicken. Add oil and zest to the jug and stir properly. Pour every thing into the dry components and stir briefly to mix. The batter ought to be thick however pourable. Pour into loaf tin and bake for 45-50 minutes, till a chopstick comes out clear. Enable to chill absolutely.
To make frosting, add butter, icing sugar, vanilla and lemon zest to a mixing bowl and whip for 3-Four minutes with an electrical whisk or stand mixer till fluffy. Add the lemon juice a little bit at a time, till the frosting is easy and shiny. Unfold on prime of cake and enhance with lemon zest.
