I made this in school some time in the past and ever because the climate began getting a bit colder I’ve been CRAVING IT….it’s filled with veggies, protein, carbs and tastes like HEAVEN! It’s additionally tremendous easy to make so its nice for meal prepping at the start of the week (particularly if the week goes to be filled with chilly wet days)
•1-2 eggplants, cubed and roasted (toss with olive oil and sea salt, roasted at 375 for 25 minutes till tender)
•2 zucchinis, diced
•1 cup diced carrots
•1 onion (I solely did 1/2 a big purple onion) •Olive oil
•1 can chickpeas
•2 cups tomato puree (we had none so I used my favorite victoriafinefoods pasta sauce)
•2 cups vegetable broth
•Sea salt
•Quinoa (to serve with)
1. Sauté an onion in olive oil and sea salt till brown.
2. Add in diced carrots, chopped zucchini, a bit extra oil, and prepare dinner till browned and tender.
3. After a couple of minutes toss in rinse and drained chickpeas and pre-roasted eggplant cubes (I used mine from meal prep!). 4. Pour in tomato puree and vegetable broth. I added extra sea salt and plenty of cumin
5. Cowl with a lid and prepare dinner on medium warmth till the liquid will get absorbed and it will get thick (this took about 40 minutes with stirring each 5/10 minutes). ****Served over quinoa (simply ing package deal directions)!
