On the lookout for a comfy meal filled with flavour that tastes prefer it’s been cooking for hours when it actually solely takes 30 minutes?? ⁣

If you realize me I’m ALL about fast meals, majority of my meals are issues i can simply throw every part in a pan and let it prepare dinner for a bit. Which is why I LOVE curry. The flavours are AMAZING and so comforting, it’s nourishing, filling and so fast! This one I packed filled with veggies which can be in season in Ontario proper now! ⁣

Ps. Don’t be scared off by the lengthy ingredient record ⁣numerous it’s simply spices you should have in your pantry already!


* 1 onion, chopped⁣
* 1 Tablespoon grated recent ginger⁣
* half of tablespoon of turmeric⁣
* 1 tablespoon of cumin⁣
* 2 cloves garlic, finely chopped⁣
* 1 Tablespoon olive or avocado oil⁣

* half of cup pink bell pepper, seeded and chopped into chunks⁣
* 1 cup chopped carrots⁣
* about half of of a medium eggplant, chopped⁣
* 1 medium zucchini or summer time squash, reduce into 1/4-inch chunks or slices⁣

* 1 can rinsed and drained canned chickpeas or lentils * if utilizing dry, prepare dinner forward of time⁣
* 1 can coconut milk ( mild or full fats)⁣
* half of cup vegetable inventory or hen broth⁣
* 2 tablespoons pink curry paste (i used thai kitchen model)⁣
* sea salt⁣

* 1/Four teaspoon sea salt⁣
* half of teaspoon black pepper⁣
* juice and zest of half of a lime⁣

1. Sauté the onion in oil and spices⁣
2. as soon as the onions are translucent and aromatic, add within the different veggies and place the lid on: prepare dinner till comfortable.⁣
3. After a couple of minutes add within the pink curry paste, coconut milk, lentils and veggie inventory⁣
4. place lid again on and convey warmth to excessive and permit to simmer for about 10 minutes. ⁣
5. add within the lime juice and zest and serve over basmati rice!⁣
