I not too long ago found how simple curries are to make and i’m in love idk how I by no means knew about them… they’re so full of flavour, nourishing, SO SIMPLE and are actually simply ike a hug in a bowl i child you not I make them at the very least as soon as every week ✨
SUPER SIMPLE RED CURRY ( these measurments are totally simply me eyeballing issues.. so be at liberty to mess around till it reaches your required style!)
– sautee chopped onion ( approx 1) and carrots ( about 1-2 giant) in olive oil

– add in 1 can of coconut milk ( I take advantage of gentle!) and 1.5 cups of hen or veggie broth in addition to 2 tsp of crimson curry paste (You may completely omit this for a yellow curry!)
– add in 1 can of lentils (or 1 half of cups of cooked lentils)
– permit to simmer for about 10 minutes untl liquid dissolves a bit
– on the finish of cooking I will throw in a handful of kale or spinach and simply stir it round, it normally wilts and mixes in pretty rapidly!
– serve over quinoa ( or you’ll be able to simply combine it in!)
