it is the primary day of fall! With the climate shortly getting colder, I’m prepared fro alll the nice and cozy dishes.

This harvest bowl has alll the most effective flavours of fall and makes use of tons of in season produce,creating the right bowl to rejoice the primary day of fall!

FALL HARVEST BOWL
bowl:
– 1 small scorn squash
– 2 tbs oil, divided
– salt and pepper
– 1 purple onion, sliced
– 1 small head of cauliflower
– 1 bunch of stemmed and chopped kale
– canned lentils ( or nay different protein!)
– 1 cup of dry quinoa or rice
– 1 tbs olive oil
– 1 tbs lemon juice

dressing:
– half cup of water
– 1/Four cup tahini
– juice of half a lemon
– 1 tbs apple cider vinegar
– 1 tbs maple syrup
– 1 clove of garlic
– salt and pepper

toppings:
– goat cheese
– dried cherries or cranberries
– 1 apple, chopped

1. prepare dinner quinoa or rice, in keeping with package deal directions
2. preheat the oven to 400F and line 2 baking sheets with parchment paper
3. minimize the ends off the squash, halve it and take away the seeds. Then proceed slicing the squash into 1/Four inch items.
4. organize squash slices in a single layer on one baking sheet and drizzle with 1 tbs of oil, sprinkle with salt and pepper
5. Chop cauliflower into chunk sized items, on the second baking sheet- add the cauliflower, sliced purple onion, 1 tbs of oil, salt and pepper and blend up!
6. place each sheets within the oven and bake for about 15 minutes
7. flip the squash slices, and shake the cauliflower round a bit, and place within the oven for one more 15 minutes (change the racks ie. place the highest one on the underside now and the underside on the highest!)
8. in the meantime mix the salad dressing substances: water, tahini, lemon juice, ACV, maple syrup, garlic salt and pepper
9. in a big bowl mix the chopped kale with oil, lmon juice and a pinch of salt and therapeutic massage for about 30 seconds to melt
10. to make the bowls: add quinoa, kale, cauliflower, squash, some lentils to a bowl and high with a little bit of goat cheese, chopped apples, and dried cranberries if desired and drizzle some dressing!

*can retailer any further dressing you’ve in a mason jar within the fridge for as much as per week
